Job Details:
  • To insure timely, quality food storage, preparation and service operations for resident, retail and catering functions in conformance with the standards of the CenterLight Health System,  the Vaad Hakashrus and New York Health Code. 

     

    Manages cooks, tray assembly, utility, retail / catering and office employees

     

    Monitors, assesses and intervenes in all production processes – takes corrective action to insure accuracy, timeliness, efficiency and portion control

     

    Manages and monitors accurate, on-time tray assembly for all meals during shift              

     

    Records tray line food temperatures and corrects items not in conformance with quality standard

     

    Responds to customer issues pertaining to food services immediately and communicates issues with Director, Dietitians, Nurses, patients/families and others as necessary

     

    Inspects patient trays for accuracy, attractiveness, palatability, temperature and conformance to BAHS standards at time of production.

     

    Checks trays and foods for accuracy, taste, texture, smell and temperature at point of service and takes corrective actions to address problems as part of the Test Tray Performance Improvement Program.

     

    Builds, manages and maintains Food & Nutrition employee schedules to insure adequate coverage within fiscal guidelines

     

    Coordinates employee schedules with daily assignments

     

    Covers vacation, holiday and pre-assigned sick time within bargaining unit and budgetary guidelines

     

    Participates in recruitment and interview of new employees

     

    Covers and/or assists in covering employee during emergency absences.

     

    Maintains, updates and implements computerized food service management system

     

    Inputs daily, weekly and monthly changes into main system and tests for tray ticket accuracy

     

    Manages all aspects of diet office pertaining to computerized system

     

    Responsible for all aspects of sanitation in food preparation, tray assembly and pot washing areas

     

    Maintains all sanitation and safety in conformance with BAHS, New York Health Code and the Vaad Hakashrus standards

     

    Coordinates cleaning assignments with other managers

     

    Implements cleaning assignments and insures employees are accountable for responsibilities

     

    Insures all products are properly stored and rotated and that at all times meat, dairy and parave areas are inspection ready

     

    Maintains and inspects kitchen, production, serving and storage areas including facility, equipment, machines and tools to insure optimum working conditions in conformance to regulatory requirements.  Reports need for all repairs and/or replacements to Purchasing Coordinator.
