Prepares and serves breakfast and meal entrees for residents and staff . Modifies food consistency as necessary. Monitors and documents cooked and panned food temperatures and takes steps necessary to ensure temps are up to specifications. Monitors and documents refrigerator/freezer temperatures; notifies supervisor of temps outside of recommended range. Cleans work area, labels and dates all leftovers, stores properly. Completes pre-prep for following day. Follows guidelines of HACCP Food Safety System. Supervises diet aides in the performance of their duties. Follows basic sanitation rules. Completes and documents cleaning tasks as designated on cleaning schedule. Assists in cost containment by use of standardized recipes and portion sizes indicated on menu. Assists in ordering and proper storage of all supplies. Supervises dietary staff in the absence of the Food Service Supervisor. Uses equipment and cleaning chemicals in a safe manner. May be required to lift, push or pull objects weighing 50 pounds. Repetitive movements may be required at various times. Performs other duties as requested by Food Service Supervisor. May be required to work shift hours other than scheduled. Must be able to read, write and understand the English language.
